Tom’s Two Step Steak: the perfect Texas-style steak recipe

With a slow-grill method followed by a sizzling cast-iron sear, this steak is tender, flavorful and downright legendary — because there’s nothing more Texas than a perfectly grilled steak.
Tom’s Two Step Steak Recipe
Ingredients / Tools
- Thick-cut steak (Tom loves 44 Farms, but any brand will do just fine)
- Dry rub steak seasoning or coarse salt and pepper combo (Meat Church rubs will not disappoint)
- Slice of butter (optional canola oil)
- Meat thermometer
Directions
Step 1
Bring steak to room temp by removing it from the fridge for at least 1 hour. Pat dry if needed (never cook cold or wet steak). Preheat grill to 275-300°F with an indirect setup.
Step 2
Season steak with your favorite dry rub, but don’t overpower. Let sit for 10 minutes.
Step 3
Grill steak until internal temp reaches 120°F, then let it rest for 10 minutes.
Step 4
Fire up cast-iron skillet on the grill or stove to 500-550º+ with a little canola oil or butter. The key is to get the cast iron hot!
Step 5
Sear each side for about 1 minute, or until internal temp reaches 130°F. Top it off with thick slice of butter
Step 6
Rest steak on a cutting board for 5-10 minutes. Slice against the grain and enjoy!
